Saba is the Japanese word for the chub, or Pacific mackerel, which is just one of many species of fish classified as mackerel. The fish is very commonly consumed throughout Japan and is popular because of its nutritional value and affordable price.
Saba mackerel is a moderate source of calories. Each filet, which is slightly larger than 5 ounces, contains 230 calories. Most of those calories come from 34 grams of protein. The high-quality protein in mackerel promotes healthy and strong muscles, and it's also great for your skin, hair, and immune system.
Saba's flavor is incredibly complex so many will simply describe it as “flavorful” or “strong.” It has a bit of fishiness, saltiness, and some notes of sourness from both the natural flavor of the fish and vinegar marinade, and deep umami.
